KOVAL is the first distillery in Chicago since the mid-1800s and the largest completely independent woman owned craft distillery in the USA. KOVAL crafts internationally award-winning whiskey, gin, and specialty spirits, using certified USDA organic single origin grains, and a heart-cut approach to distilling. KOVAL uses unique alternative grains such as oat and millet, and all of its single barrel whiskey expressions can be traced back to the field on which the grains were grown. KOVAL works directly with local farmers and uses regenerative crops, such as millet in their Bourbon, their most popular whiskey. KOVAL’s founders, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart are leaders of the craft spirits movement both in the USA and abroad. They have educated over 3,500 prospective distillers from around the world, and set up over 200 craft distilleries from Uganda to Tokyo. This year they were awarded the Dave Pickerl Craft Member of the Year award by the Distilled Spirits Council of the United States.

Attendees will meet key leaders and staff from FH Paschen, get a behind-the-scenes tour of FH Paschen’s office and enjoy crafted cocktails from Koval.
